A delicious quick and easy main or side dish.

A delicious  quick and easy main or side dish:

A quick Quinoa or Gluten Free Penne Pasta Dish with Tomatoes and Feta Cheese
Make Quinoa or pasta as directed. I used this: 
Add 4 Tablespoons or desired amount of Organic Roma Tomatoes from Costco into warm quinoa or pasta. Here are the tomatoes I used: 
Add 3 Tablespoons of Feta cheese and mix in also. Here's my feta: 
Add Garlic Salt and season as desired.

The heat of the quinoa or pasta will cause the oil on the tomatoes to melt and coat the quinoa or pasta.  No need for added butter or oil.

The time it took to make this fabulous meal: 10 minutes. Yes, that is correct. 10 minutes. That's the time it took to cook the pasta. If you want to kick up this meal, add a can of premium chicken, also available at Costco. Maybe add some bacon bits? 

Easy peasy. All of these items, including the garlic salt was purchased at Costco! Costco is now carrying a ton of amazing organic and gluten free items, which is wonderful news!

Chicken Mash

Chicken mash is one of my most favorite comfort foods. 

Chicken mash recipe:
2 cups of minute rice prepared
One package of condensed cream of mushroom
1 can of Costco canned chicken
1/4 cup of milk
Minced garlic
Garlic salt
Salt and pepper to taste 
Parmesan cheese 

Fix the rice. In another pan, pour in cream of mushroom, mix in chicken and spices and milk and cheese. Stir till hot. Serve over rice. 
G free organic cream of mushroom! 

Love this stuff. 

All gluten free and delicious! I'm so so happy to have found this condensed cream of mushroom. I used to use Campbell's but all of their stuff has gluten in it. Chicken mash is back! I also like to sauté mushrooms and add into the mix. 

Anyways, sorry for the long absence. December was a hectic and crazy busy month for me. I prepared and ate lots of delicious foods that was gluten free and safe.
