Taco Sunday

I love Mexican food. I was a bit concerned that when I went g free there would be no more Mexican food. 

Not so! 

Carne asada and 1 package of taco mix
Sliced onion 
Organic gluten free corn tortillas
Shredded cheese
Organic sour cream 

I cooked them in vegetable oil to make them not so flimsy and gave them a dusting of Parmesan cheese. 
Slice up the meat and build your tacos. 

Yum!

California breakfast

Avocados are amazing. Tasty and good for you, what's not to love. I found this recipe on Facebook and want to share it with all of you 😄

Preheat oven to 425
Cut one avocado in half. 
Make center big enough to hold an egg
I added garlic salt to the center of the avocado before I added the egg. 
Add egg to the center. Salt and pepper the the top. 
Sprinkle with bacon
Put in oven for 15 minutes. 
Sprinkle with cheese and enjoy! 

Hot, delicious and tasty. Mmmm. Looking forward to making more of these!

Pizza!!!

I love pizza. So I had it in my head that gluten free meant no more fun food. I was soooo wrong. I love pizza. Tonight, we made BBQ chicken pizza and it was fabulous!! Here's the details:
I purchased this crust kit at Raleys in their gluten free isle. Fairly easy to make, but allow time to make it. I used my kitchen aid kixer to mix it up. 
I used my new pizza stone. It worked amazingly. 
This BBQ sauce is gluten free. Good thing because it's my fav. 
After the crust is made, I added the BBQ sauce. 
Next is the cheese! Cheese is amazing. 
Next we added the bbq'd chicken, black olives, sliced onions and more cheese!
Last step, enjoy pizza! Oh my gosh, this thing smelled amazing while cooking!!! It tastes absolutely wonderful! I can't to try out other pizzas like margaritas and pepperoni. I love my gluten free life!

I have just discovered this great free app. Unsure if the food item is gluten free? Scan the barcode with this free app. Under ingredients, it will say if it's gluten free or not. Love it. Login in with an email address or with Facebook. 
What a fabulous tool! I look forward to using this when I go grocery shopping.

A Sweet Treat

I love Oreos. But alas, they are gluten packed gut bomb waiting to cause pain, discomfort and mass destruction. Good news! There is a fabulous substitut that tastes great! 
The mi-del cookies taste great! They are not only gluten free, but dairy free as well. So when I need that chocolate cookie fix, I can have it. 

I found these at Raleys in their gluten free section. I can't remember how much I paid for them. Some where around $3.99. Enjoy!

Things I Learned Today

My hubs and I went up to Tahoe for the day. It was gorgeous. And like most trips, you need to stop for food. I learned that there is such a thing as too much garlic and gluten free is not a choice but a necessity. 

I had a bite of my hub's pizza. Then later I had an ice cream cone. Now, up until this point I figured I was going gluten free because it may help. Well, now I now gluten and I are not friends. At all. So, gluten free is my life from now on. I'm excited about the new journey and excited about how it makes me feel. More energy, happier and of course, weight loss. So, stay tunned for tips and recipes and ideas.

Gluten Free Fall!

I love Autumn. It's all about the leaves changing colors, cooler weather and pumpkin spice lattes. And yes, they are gluten free! Starbucks doesn't certify them as gluten free because the flavoring is made in factory where gluten is present, however it's pretty minimal.

My New Life

Hi, my name is Cori. I recently went gluten free and I haven't looked back. I have been G Free for 3 weeks now. Not only have I noticed a huge increase in energy, but I have also lost weight (9 pounds) and over all feel much more happier. My husband has been along with me on this journey, albeit not by choice. He's even lost some weight too.

I want to use this blog to post recipes, product reviews, restaurants that offer G Free and other helpful tips and hints.

My hope for this blog is to encourage others who are just starting out the G Free life or who have been on it but want new ideas...basically to encourage everyone to embrace a healthier lifestyle.
