G free turkey day


I love thanksgiving. I was worried about this year because of my new gluten issue. However, Raleys had some wonderful options! Butterball turkeys say gluten free on their labels. I used g free chicken broth to make my basting sauce. 
This stuff is fabulous. 

Organic lemons and Rosemary. And organic pre-pealed garlic

Here's my basting sauce:

Turkey has been prepped 


I used Glutino's g free corn bread stuffing which tastes so amazing! I made greenbeans with bacon and onion. Mashed potatoes and g free gravy. My mom brought sweet potatoes and marshmallow cream, also g free. The only thing not g free was the Hawaiian rolls, but I avoided that. For dessert, I made g free pumpkin whoopie pies.  It's a recipe on Pinterest. I just substituted the regular stuff for g free items. So yummy.

Delicious, healthy G free soup

It was such a cold, stormy day today. That means it's a perfect soup day. I love soup. It warms you from the inside out. Delicious, healthy and g free on top of it...perfect. 

Here's what you need: 
1 box of organic g free chicken broth
1 can of Costco chicken
2 cups of prepared white rice
Several handfuls of Kirkland stir fry
4 garlic cubes 
Garlic salt
Celery salt
Oregano
Basil 
Salt and pepper. 

Prepare the 2 cups of rice in a big pot
Rice is gluten free 

After the rice is prepared, add in the box of chicken broth. 
Stir, stir, stir
Add in the chicken. Drain the chicken first. 
Add in 4 of these babies. You can find them at trader joes. That place has tons of g free items. 
More stirring. 
Kirkland veggies! I use these things for every thing! 
Toss in the veggies. Stir some more. 
Add in the seasonings. This is what I used. Feel free to add in other stuff too! 
Stir some more. 

Bring soup to a boil and make sure the veggies are heated all the way through.

Chicken Tenders! At Last!!!

I was shopping at our new walmart as it has a fabulous selection of g free and organic items. Walmart...shocking, I know. But it's true! 

I was in the healthy section of the freezer isle and there it was! 

I was so excited, I actually screamed out loud! Lol! Everyone around me jumped. Then I had to explain why. Lol!! I couldn't wait to get home to try it out. 

It was hard to wait for these things to come out of the oven. 

Added a little garlic salt, salt and pepper and enjoyed these with my g free hidden valley ranch! I was so happy I almost cried! You can also see the amazing g free scones in the background. 

Tyson has come through with an amazing, yummy g free solution for those of us that adore chicken tenders. I highly recommend this! They actually taste better than the original recipe.

Scones!

I love scones a lot. I was really bummed by the whole gluten thing, however, Raleys came through in a huge way!

Raleys has a gluten free scone mix. Several in fact, but I really enjoy Meyer lemon scones. 

This was the easiest and fastest scone mix ever! 

I added water and oil. Spoon onto a pre-oiled pan and bake! The whole process lasted about 30 minutes. 


It said to bake for 20 minutes or until golden and lightly browned. For my oven it was more like 26 minutes. 


So far, this is the best scone I have ever had. They were not dry at all! Full of flavor  and most importantly, g free!

I highly recommend Sticky Fingers Scone Mix. I know Raleys carries it. Safeway might as well. I do believe Walmart also has it.

Preserve Public House

This is a wonderful pub in Winters, Ca. It's rustic atmosphere and couches are very inviting. And then they have some g free items. 

Tonight, I had the pomegranate cider very delicious and very autumn like. 

I also had the stuffed peppers that were amazing. Sorry no pics. I was too hungry. But trust me, they were sweet, full of farm fresh cream cheese and chives. I highly recommend. 


I also had the chicken tostada. It's served on a fried corn tortilla. This was also packed full of flavor and gluten free. 

Winters is a quaint little town about 13 miles outside of Davis and Vacaville. There are some other amazing places to eat like the Buckhorn, but I truly like Preserve Public House. And yes, they do have some g free items as I ate there and was totally fine. 

Get out and explore and eat well!

G Free Safe Restaurants

Eating out is fun. It can also be a big hassle for those of us facing down celiacs. One wrong dish and we can be taken down. 


This link lists 75 safe and gluten friendly places to eat. I hope that some of these places are near where you live. It's quite a list of places. I am looking forward to trying out the list. 

The most gluten free friendly place I have found so far is Chipotle. Chipotle offers a 98% gluten free menu. The only thing not g free is the tortillas and sopas. Chipotle also uses local produce. That's pretty cool. 

I hope you find this list helpful. I would love to hear what places you have gone to and what you had tried and your thoughts.

The Best Snack Ever

The best snack on earth has been located!!!

Snyder's has become my hero! Not only do they now make gluten free pretzels, they made them delicious!!!! My skeptical friend said they taste better then the real ones! So, get yourself down to Raleys or Safeway and get yourself a few bags of this. Trust me, you won't be able to eat just a few. 

Chicken Soup

So I had a pretty bad gluten attack last week. I was desperate for the pain to stop. Despite the really fun stomach cramps, you need to eat. My sweet hubs went to the store to get me some g free chicken soup. Poor guy couldn't find any. So I said just grab some g free chicken broth. 

My fast, delicious, g free soup recipe:
1 container of g free chicken broth
1 cup of prepared white rice
1 can of Costco chicken
A handful of veggies 
4 tablespoons of garlic
Dash of oregano and basil

Boil all together and enjoy! 

Peach Pie

I made pie for my family's dinner. My grandfather is a huge fan of peach pie. I had canned white peaches from my tree in my backyard. I bought gluten free crust from whole foods and whipped up a batch. I used a recipe out of the Betty Crocker cookbook and modified it with g free stuff. The results: a HUGE hit!! 

Easy, delicious breakfast

I love potatoes in all forms. So when I found a recipe for a breakfast potato, I was so super excited. 

Here's what you need:
Russet potatoes 
Eggs
Shredded cheese
Bacon
Butter
Scallions 

Cool the potatoes in the microwave. Once done, slice off the tops and scoop out the centers carefully. You don't want to puncture or tear the skin. Add in the butter, the egg and all the toppings you want along with seasonings. 

Bake at 350 for 20-25 minutes. I recommend putting foil down on your pan or spray it with oil. 

These little beauties are amazingly tasty!

Fast and tasty lunches

I love quick, easy and delicious. Who doesn't? I found these little babies at Target, thanks to a fellow g avoider. 

Ok, 4 minutes in the microwave and instant gormet cheesy Mac. And it was good!!!


I have to say, my favorite one of these is the bacon and peas cheesy Mac. So good!!!! Target. Go get and enjoy!

Banana Nut Bread

I had received an email from my yarn boss with the subject line: MAKE THIS!!! And in the email was a link: http://www.skinnytaste.com/2014/10/gluten-free-lightened-up-banana-nut.html?m=1. 
So, I figured why not. I haven't made bread yet. Sure. Let's do this. I went to the store and got my supplies. 

I love baking. So I set off to work on the banana nut bread. 

Since this was my first attempt at g free bread, I was nervous. 

Their nervousness left after the smell of fresh banana nut bread filled the house. 

It was a huge success. I gave some to my friend who is very skeptical of the whole g free tasting good thing. She was floored that it was g free. And man, it was good. I strongly urge you to make this. 



Mongolian Dinner

I like Mongolian. Then there's that pesky gluten thing. My solution: no noodles. Stick to the veggies and meat. No soy sauce!!! Unless it's g free. I made this Taft little bowl:

I have beef, chicken and lamb in there with lots of cabbage, onions, mushrooms, scallions and more. I used the cooking wine, sugar water, ginger and garlic for the cooking. I had them clean the grill for me. 

I like soy sauce, so I brought my own:

Hot and yummy! I can't wait to go back!!

Game Time!

Who doesn't love a good football game and finger food? Have no fear! I found finger food that is g free and delicious. 

Mini chicken tacos and chicken taquitos at Trader Joe's! So delicious and safe! Add some Parmesan cheese, sour cream and pace picante sauce. Mmmmmmm


Quick stint in the oven and presto! Hot, tasty, g free finger food that all your guests will love!
